Ham and Beans or even Vegetarian beans are easy to cook in the truck.  I use a Rice Cooker to make my beans as they are done faster but a crock-pot would work just as well.  

First I soak the beans and I have found that using a zip lock baggie works the best, add the beans then cover with water and seal them to soak over night.  I had to experiment to figure out the perfect amount of water and air to use when I sealed the bag.  The beans really expand so take that into consideration.  

My ham and beans are never the same, as I never use the same ingredients I use what I have on hand and there are times when I do not have any ham and I will use another meat or no meat at all.  I like a lot of vegetables so everything is thrown into the pot and I have always had very good luck.  I like to use a beef, chicken, or vegetable broth when I am making this meal and I always use the low sodium variety.  It is almost scary how much sodium is in soup and broths.   

Left overs or frozen or before I make my soup I will take out some of the beans to be used in another recipe.  I prefer my homemade beans then I do the store bought beans but in a pinch I will use them.
